Place a skillet over medium-high heat. Add 1 lb ground sausage and cook, breaking into small crumbles, until fully browned and no pink remains. Drain away excess grease thoroughly.

Lightly spray slow cooker insert with non-stick cooking spray. Place 16 oz cubed softened cream cheese across the bottom. Pour 10 oz undrained Rotel over the cream cheese, top with crumbled sausage, and cover with 1½ cups shredded sharp cheddar.
