Homemade Pickled Beets

1.Boil Beets Intact:35-45 min.

Wash 2 lbs fresh beets, trimming leafy tops to leave 1 inch of stem attached. Submerge in a large pot of water, bring to a boil, and simmer for 35 to 45 minutes until fork-tender.

2.Slip Skins and Slice:10 min.

Drain beets and cool slightly. Apply firm thumb pressure to slide skins off easily. Trim ends and slice beets into ¼-inch rounds or wedges. Pack tightly into clean glass mason jars.

3.Simmer Spiced Vinegar Brine:5 min.

In a saucepan, combine 1 cup white vinegar, 1 cup apple cider vinegar, 1 cup sugar, 1 cup water, 1 tsp salt, ½ tsp peppercorns, 4 whole cloves, and 1 cinnamon stick. Bring to a rolling boil, then reduce heat and simmer for 5 minutes.

4.Pour Brine and De-Air:2 min.

Ladle hot brine over the sliced beets in the jars, leaving ½ inch headspace at the top. Tap jars on a towel-lined counter to release trapped air bubbles.

5.Cool, Seal, and Cold-Cure:24-72 hr.

Let jars cool completely at room temperature, seal with lids, and transfer to the refrigerator. Allow to cure for at least 24 hours (flavor peaks at 2 to 3 days) before serving.
